Indonesian Unique Foods Fried Duck (Bebek Goreng), and How to cook it


Fried Duck comes from Surabaya (east java).  But now fried duck has been spread into many regions. Almost every person has known this food. Starting from the big city until village provided this food. Here they are the recipe and how to make it.

But now fried duck has been spread into many regions. Almost every person has known this food. Starting from the big city until village provided this food. Here they are the recipe and how to make it.

Ingredients:
  • One duck young meat (cut into 4-5 parts of the body)
  • 3 tablespoons of vinegar
  • 500 ml of boiled water
  • 4-5 lemongrasses (crushed)
  • 3 pieces of lime leaves
  • Frying Oil
You need to mash this seasoning:
  • 4 garlics
  • 8 red onions
  • 1 teaspoons of coriander that you have already toasted
  • 2cm ginger
  • 1cm turmeric
  • 7 pecans
  • 2 teaspoon of salt
  • 5-7 lime leaves (sliced and throw the bones)
  • 2 cm galangal
  • 3 cm white part of lemongrass (sliced)
Sauce for fried duck:
  • 3 or 5 tablespoons oil
  • 5 red onions
  • 6 pieces red pepper
  • 12 pieces of cayenne pepper
  • 2 tomatoes (choose the red one)
  • 125 ml (boiled water)
  • ½ to 2½ teaspoons of shrimp paste (bake or fried)
  • 1 teaspoon of salt 
  • Sugar to taste
How to cook fried duck:
  1. Boil the young duck a half cooked, and then lift it (just to make the young duck soft or tender).
  2. Give the seasoning powder to the duck which has been boiled, let it for about 5 minutes so that the seasoning got in the duck. Fry it until done then lift.
  3. Fry the garlic, red onions, pieces red pepper, pieces of cayenne pepper, tomatoes. And then wait until it has a half of cook. Lift
  4. Mash the ingredients above with sugar and salt.
Serve with vegetables like cabbage, cucumber, tomatoes, lettuce, and basil.
